Many of us love to experiment with our food. Sometimes, they turn out terrible but at other times, they are a treat for our tastebuds. As such, have you ever thought of giving your processed favourites like pizza a more nutritious spin at home? If you are not motivated enough, here’s a quick recipe you can try, courtesy chef Meghna Kamdar, who whipped up bite-sized millet pizzas from scratch.

“A welcome change at my home making millet pizza from Bajra ka Aatta (Pearl Millet). Bajra is good for weight loss, diabetes management, hair, nails and skin. So just another excuse to incorporate millet into our favourite pizza,” said Kamdar.

Ingredients

1 cup – Bajra flour
Salt
Water
Ghee
Pizza sauce
shredded cheese
Choice of toppings

Method

*To make the pizza base, just take 1 cup bajra and make dough with some salt and water
*Roll the dough and use a round object or cutter to make perfect rounds; make sure it’s covered with dry bajra flour.
*Dry roast them by brushing a little water on both sides as bajra is gluten-free. We need to ensure it doesn’t get dry and come off.
*Now further roast it on flames so that the pizza base gets crispy and crunchy.
*Make sure you apply some ghee on the mini pizza base.
*Now spread pizza sauce, choice of toppings, and shredded cheese.
*Next take the same pan, and pour some ghee on the pan surface
*Now place the millet pizza on it; cover and cook till the cheese melts.

“Pearl Millet Pizza is ready. Enjoy. It’s actually healthier and will be an instant hit with children and grown-ups too,” shared Kamdar.

Taking a cue, we decided to ask experts whether this homemade millet pizza is a healthy one.

Pearl millet, which is used to make this millet pizza, contains antioxidants called phenolic compounds, said Suvarna Hebbar, coordinator of the programme, clinical nutrition and dietetics, Manipal College of Health Professions, MAHE, Manipal. “These antioxidants can help protect your cells from oxidative stress and lower the risk of chronic diseases. Added to this the millet can also help with managing your weight by making you feel fuller and reducing the amount of calories you consume,” said Hebbar.

This recipe is pretty healthy except for using the processed cheese sprinkled on top, commented food therapist Dr Ria Banerjee Ankola. “One can instead opt for homemade paneer or unprocessed cheese like feta cheese,” said Dr Ankola.

Dr Nirupama Rao, nutritionist, Rejua Energy Centre, Mumbai said that pearl millet pizza can be a healthier alternative to traditional pizza with nutritious toppings and in moderation. “Pearl millet is a whole grain, rich in fibre and various nutrients. It can be used as a pizza crust and can offer a gluten-free, higher-fibre crust,” said Dr Rao.

However, how healthy the food item is “depends on factors like the toppings, portion size, and preparation method”. “Opt for wholesome toppings like vegetables, lean proteins, and minimal cheese to keep it nutritious,” added Dr Rao.
