Actor Hina Khan, who is courageously battling stage 3 breast cancer, continues to inspire her fans with her unwavering positivity and regular updates on social media. Among her shared moments, she often highlights her dietary choices, offering glimpses into her journey.
Recently, Khan delighted her followers by sharing a cherished Kashmiri culinary tradition—a photo of her savouring thani daar chochwor alongside a comforting cup of chai. This wholesome combination is not just about taste; it carries cultural and regional significance, representing the rich heritage of Kashmiri cuisine.
“Noon chai tc thani daar chochwor. All things Kashmir. #KashmiriAtHeart,” she wrote.
But what exactly makes chochwor — a traditional Kashmiri bread — so special?
Kanikka Malhotra, consultant dietician and diabetes educator, tells indianexpress.com, “Thani daar chochwor holds significant cultural and culinary importance in Kashmiri cuisine. Traditionally enjoyed with chai, it symbolises hospitality and communal bonding during social gatherings.”
The preparation of this bread reflects the region’s rich culinary heritage, she adds, influenced by historical migrations and trade. Its unique texture and taste highlight the use of local ingredients, showcasing the Kashmiri emphasis on freshness and flavour. “Furthermore, thani daar chochwor serves as a bridge between generations, preserving traditional cooking methods while adapting to contemporary tastes, thus reinforcing a sense of identity among the Kashmiri people,” she notes.
Malhotra mentions, “Chochwor is made using a specific combination of ingredients and techniques that contribute to its unique texture and taste. The dough typically consists of all-purpose flour, sugar, salt, milk powder, and yeast, combined with warm water to activate the yeast. This fermentation process is crucial as it helps develop a soft, airy texture.”
After kneading the dough, she explains that it is shaped into rings with a hole in the center and boiled briefly before baking. This boiling step creates a chewy exterior while maintaining a soft interior, and the final touch of sesame seeds enhances flavor and visual appeal.

Chochwor, enjoyed with chai, offers some nutritional benefits, says Malhotra. It provides carbohydrates for energy, while the inclusion of sesame seeds adds healthy fats, calcium, and iron, supporting bone health and oxygen transport.
Malhotra stresses, “However, it is important to note that chochwor is primarily made from all-purpose flour, sugar, and milk powder, which can lead to higher glycemic index levels and lower fibre content compared to whole grain breads like whole wheat roti. This may not be ideal for individuals managing blood sugar levels or seeking a high-fibre diet. Moderation is key to enjoying this delicious snack while maintaining balanced nutrition.”
Malhotra discloses, “This beloved bread embodies tradition, often served during communal gatherings and celebrations, fostering a sense of belonging. To preserve such culinary treasures in modern times, families can host interactive cooking workshops that blend storytelling with hands-on experiences, allowing younger generations to learn the art of making chochwor.”
Moreover, local chefs and food entrepreneurs can create fusion dishes that incorporate chochwor while respecting its roots, making it appealing to contemporary palates. Embracing technology, social media can also be leveraged to share recipes and cooking videos, ensuring these traditions thrive in a dynamic culinary landscape. “Importantly, incorporating whole grains or healthier ingredients can enhance the nutritional profile of chochwor, promoting health while honoring tradition,” she says.
