As the G20 Summit, which is set to take on September 9 and 10, gets closer, dignitaries from across the world are all set to experience a gastronomical extravaganza. The Taj Mahal, New Delhi, has always been a favourite of the diplomatic community and for G20 guests, Chef Arun Sundararaj, Director of Culinary Operations, has curated a special menu with special emphasis on millets. In fact, he has smartly combined them to create special offerings across three meals.

For breakfast:

Ragi idli
Millet pancakes

Lunch/ Dinner:

Lamb and little millet soup
Palm heart, cherry tomatoes, pearl millet and mix mesclun
Murgh, Badam and amaranth korma
Millet nargisi kofta
Caramelised onion and cumin millet pulao

Desserts:

Wild rice and pearl millet mousse
Orange quinoa and little millet kheer

Assorted Choco Bon Bon
Indian sweets – pista and pumpkin roll, kaju katli, gulkand rose ladoo
Naan khatai cookies
Oat and chocolate granola bars
G20 branded/ themed macaroons to be added

The hotel has also been done up in colours inspired by the colours of Bharat Mandapam and the G20 colours. “Our hotel will showcase the incredible flavours of India with special emphasis on the usage of millets in the culinary offerings. Additionally, special experiences are being curated that showcase the cultural diversity and heritage of India,” says a hotel spokesperson.
