As everyone goes about in their festive best this season, we ask some of the country’s best chefs to show you how to dress up your dining table and light up your and your friend’s and families’ tastebuds and spirits, with Festive Foods, only on foodI.E.

We start this season with a visit to Guppy by Ai, a new avatar of one of Delhi’s beloved Japanese stand-alone  restaurants, Ai — The Love Hotel, no pun intended. Japanese is quickly becoming an international favourite on the culinary landscape of Delhi, and indeed, the rest of the country. Traditional yet contemporary, sometimes subtle in flavour, sometimes explosive, we take you to some of the cuisine’s best interpretations.

Guppy by Ai’s Chef Vikram Khatri shows you how to set fire to your meal, and that too without matches. Join him as he dishes up the Guppy House Salad, his vibrant celebration of Japanese ingredients and flavours. A kaleidoscope of colours and textures, the vegetarian salad comprises seasonal produce tossed with some more exotic ingredients, and bound together by a Japanese Wafu dressing, made using miso. Don’t worry about all the technicalities, though, as Chef Vikram breaks it all down and tells us the best places to source the region’s typical ingredients.
