Spring is in the air, and Easter is just around the corner. It is the perfect time to create lasting memories with your loved ones, and what better way to do that than by whipping up some delicious treats together?

So, whether you’re hosting a brunch for friends and family or keeping things cozy, here are 3 easy Easter recipes that are big on flavour but don’t require spending hours in the kitchen.

Strawberry Flavoured Glazed Chicken by Chef Ranveer Brar in collaboration with Hershey’s

Ingredients

  • 1 boneless, skinless chicken breast
  • ½ cup strawberry syrup
  • 1 pinch rosemary
  • 1 clove garlic, minced
  • 1/2 tablespoon olive oil
  • 1 tablespoon chopped basil
  • 2 teaspoons chicken stock
  • Salt and pepper to taste
  • Basil sprigs for garnish

Method

  1. Flatten the chicken breast and use a meat tenderiser evenly on both sides.
  2. Once tender, cut the chicken into bite-sized slices.
  3. Prepare a marinade of strawberry syrup, olive oil, garlic, rosemary, and chopped basil.
  4. Add salt and pepper to the marinade for taste.
  5. Add the chicken pieces to the mixture and let it marinate for 15 minutes.
  6. On a grill pan, add oil and pan-sear the chicken on both sides for a few minutes.
  7. To prepare the sauce, heat oil in a pan and add garlic and syrup.
  8. Add chicken stock, chopped basil, rosemary, salt, and pepper to the pan. Whisk it until the sauce reduces.
  9. Plate the chicken slices and pour the hot strawberry-basil sauce on top. Serve hot!

Ingredients

  • 2 green apples (preferably Granny Smith)
  • ½ cup mint leaves
  • 3-4 celery stalks
  • 1 seedless cucumber
  • 1-2 tablespoons lemon juice
  • 1-inch ginger

Method

  1. Core and chop the apples.
  2. Cut celery lengthwise and then cut into small pieces.
  3. Chop the cucumber.
  4. Peel and chop the ginger.
  5. Blend all ingredients in a blender. If needed, add a little water to facilitate blending.
  6. Strain the juice and garnish with sliced cucumber, lemon, and a few ice cubes. Your drink is ready!

Crispy Sweet Corn and Roti Nachos by Gautam Mehrishi, Corporate Executive Chef, Club Mahindra

Ingredients:

  • 500 grams sweet corn kernels
  • 2 tablespoons olive oil or melted butter
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • Cheddar cheese, grated
  • 3-4 leftover rotis
  • Oil for frying

Method:

  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper or foil.
  2. In a bowl, toss the sweet corn kernels with olive oil or melted butter until evenly coated.
  3. Sprinkle paprika, garlic powder, salt, and pepper over the corn kernels, and toss again to coat evenly.
  4. Spread the seasoned corn kernels in a single layer on the prepared baking sheet.
  5. Bake in the preheated oven for 20-25 minutes, stirring halfway through, until the corn is crispy and slightly golden brown.
  6. Cut leftover rotis is small triangles like nachos, and deep fry till crisp and cool.
  7. Now layer the crispy fried rotis and corn, spreading melted cheddar cheese and sprinkling the spices and parmesan cheese on the top.
