Well, Chef Kunal Kapur‘s twist on the evergreen staple, rice, is a must-try for anyone looking to add a refreshing spin to their school or work lunches. Ordering out or eating from the canteen sounds appealing, but this rice recipe has a tomatoey twist that will satiate your hunger cravings.

According to home chef and author of the cookbook Fooding Around, Reetika Mitra, adding raw or pureed tomatoes to rice imparts a delicious and flavourful taste to the dish. Not only that—tomatoes are also nutrient-packed superfoods.

“Tomatoes can help in promoting healthy skin, aid in weight loss, and also assist in maintaining a healthy heart. Additionally, they’re a good source of beta-carotene, vitamin C, all of which are antioxidants that shield us from cell damage and aid in healing. These help support our immune system and fend off viruses. They also contain micronutrients like folate and potassium, as well as vitamin B and E. Typically, folate helps in building DNA and developing new tissues,” she tells indianexpress.com in an interaction.

Ingredients
*3 tbsp oil
*1 tsp hing
*4 dry red chillis
*1 bay leaf
*1 pc cinnamon
*4 cloves
*4 cardamoms
*2 tsp mustard seeds
*2 tsp cumin
*1 tbsp chana dal
*2 tsp urad dal
*1 tbsp garlic
*1 tbsp ginger
*1 tsp green chilli, chopped
*1 sprig curry leaf
*Handful of cashew nuts
*1/4 cup of onion, chopped
*2 cups of tomato, chopped
*Salt to taste
*1/2 tsp turmeric
*1 tbsp red chilli powder
*1 tbsp coriander powder
*1 1/2 cup water
*1 cup of rice
*1 tbsp coriander stems, chopped
*Handful of mint leaves

Method

*To prepare the rice, start by heating oil in a pan.
*Add hing, dry red chilli, bay leaf, cinnamon, cloves, cardamom, mustard seeds, cumin, chana dal, urad dal, garlic, ginger, chopped green chilli, curry leaf, and cashew nuts.
*Sauté until the nuts are golden and the spices release aroma.
*Add chopped onions, cook until translucent, then add tomatoes, salt, turmeric, red chilli powder, and coriander powder. Cook until the tomatoes are soft.
*Add washed rice, coriander stems, mint leaves, and water.
*Cook until the rice is done.
*Garnish with fresh coriander leaves.
