‘It Ends With Us’ star Blake Lively loves a good key lime pie; here’s a recipe you can try this Sunday

Who doesn’t love a good dessert, especially if it is made by Blake Lively, star of the much-anticipated movie ‘It Ends With Us’? Or perhaps you’ve always wanted to bite into the pie Monica made for Ross in ‘Friends’ that led to an allergic reaction? If you, like us, have always wanted to try your hand at a ‘key-lime’ pie, read on..

For this recipe, you’ll need:

For the Crust

1. Finely crushed 10 biscuits
2. 80g light-brown sugar
3. 60g melted butter

For the filling

1. 250g sweetened condensed milk
2. 1 cup plain yogurt
3. 5g grated lime zest
4. ¾ cup fresh lime juice

For the Topping

1. 1 cup fresh cream
2. 15 g icing sugar
3. 1 teaspoon grated lime zest
4. Few lime slices

Procedure

1.Preheat the oven to 180°C.

2. In a bowl, mix the biscuit crumbs, sugar, and melted butter. Mix with a spoon or a spatula. Press the crumbs firmly into the bottom and up the sides of a deep pie ring, with the help of the bottom of a glass or any flat firm surface.

3. Bake for 8-10 minutes, till half done, i.e. till it reaches a slight brown color. Next, lower the temperature to 175 C.

4. In a separate bowl, whisk together sweetened condensed milk, yogurt, lime zest, and lime juice.
Pour the mixture into the pie ring with crust.

5. Bake this new mixture for 12-15 minutes, until the filling is set; Let it cool at room temperature. Let it rest in the fridge for a couple hours.

6. While your batter rests, move on to the topping. To make the topping- whisk some fresh cream and add icing sugar in a separate bowl.

7. When ready, apply the whipped on the pie as a topping. Garnish with lime zest and slice, and enjoy.

Be mindful of not adding excess lime to the cake batter, says Chef Saksham. “Excess lime can make it a little bitter on the palette, in which case, balancing with sugar helps”.

As the softness of dairy is required to give a smooth bite to the “citrusy” taste of the pie, we utilise sweetened condensed milk for the same. Milk that is left unreduced will also “dominate” the flavor from lime, that’s why they need to be in proper harmony. Let us know if you enjoyed this recipe, enjoy!
