I would probably manage a business in the food industry itself. But apart from having done a diploma in Hotel Management,I have also done a course at ICWAI. So if I wasn’t in the food industry,I would probably be a cost accountant.

Apart from salt,which ingredient is most important?

There are two components of a dish,the mother ingredient and the secondary ingredients. For example in a Mutton Kolhapuri,the mutton is the mother ingredient. The other ingredients are secondary. Thus,although salt is indispensable,the mother ingredient is the most important ingredient of the dish.

Which method of cooking is the healthiest?

Steaming is one of the healthiest methods of cooking. But another great technique I’ve been practising recently is vacuum cooking. In this method,the meat is sealed in a vacuum pack and simmered in water. Although this technique slows down the cooking process,it has its advantages. If cooked in this way,the meat retains all its flavour and nutrients that would otherwise have been compromised. So not only does it make for a healthy meal,but also a flavoursome one.

Do you prefer Indian food or continental food?

Although I love to eat Indian food,in terms of cooking,I prefer continental cuisines. In Indian cooking,we use so many various strong spices that they end up overpowering the flavour of the mother ingredient. Whereas,in western cooking,the seasoning is quite mild,confined to salt,pepper and maybe some herbs. Thus the flavour of the meat is not lost. For example,when you’re having Grilled Chicken,you actually get the flavour of the chicken,whereas when you’re having Butter Chicken,the flavour of the masala overpowers that of the chicken.

Do you think Puneites experiment with their food?

Actually multi-cuisine hotels and chefs are relatively new to Pune. A decade ago,Pune was not as familiar with world cuisines as it is today. People are now just starting to experiment with food.

Which dish can be said to most aptly represent Indian cuisine?

One dish that has made its mark globally as being one of the most popular Indian dishes,is Chicken Tikka Butter Masala. Around the world,people will identify Chicken Tikka with Indian cuisine.
