Which cutlery should be used for a five-course meal?
How do you indicate to the server that you are ready to order?
Where to leave your cutlery if you are still eating,so that the waiter may not clear the plate? z Where does the napkin go if you have to get up to take a call during the meal?
Hundreds of such questions were asked by the audience over a grueling two hour workshop on Fine Dining Etiquette organised by the Ludhiana Management Association at Park Plaza.
Navneet Kaur and Vikash Prasad, both faculty members at PCTE Institute of Hotel Management & Catering Technology, who have worked at Le Meridian and Oberoi Group for three years helped the audience arrange a five course meal table layout on round tables. Kaur said,We seat from the right of the chair,so that people dont bang into each other, which also helps understand why we put our purses towards the left of the chair, similarly we close our plate at 10:20 position, which helps the server to grab a hold on cutlery while clearing the plate,as clearing is always from right and serving from left.
An interactive query session on the subject was held on Wednesday.
