Chocolate cake is the answer to all angst,says pastry chef Vibha Pahwa,who is all set to conduct a workshop in the city
As a child,Vibha Pahwa would spend hours watching the ladies of the house her mother and aunts whip,chop,cook and bake in the family kitchen. The fact that she hails from Ludhianas illustrious Pahwa family,the owners of Avon Cycles,never got in the way of her wanting to be a pastry chef.
She trained at Londons prestigious Le Cordon Bleu after which,she put her creativity and expertise to full use at vAnila,a baking company named after her mother. The company sells artfully created,delicious bakes,French-style patisseries and novelty cakes in the region.
For me,baking is like meditation. Its de-stressing and my USP is sugar frosting and chocolate cakes, says Vibha,whose latest cake design is inspired by Bagwati,the Hermes bag in Zindagi Na Milegi Dobara.
I also put together a cake designed like a Rolex watch for a client last evening, says Pahwa,whose novelty cakes include one with an entirely edible Fendi shoe on it. Her cupcakes look like floral bouquets and her chai-flavoured muffin will remind you of cup of freshly brewed tea. Internationally,chai is the hot new flavour and I am looking at dishing out more versions, she says.
Enthusiastic about taking vAnila places,Pahwa is now dishing out classes which teach enthusiasts the art of baking and innovating in a fun,effortless way. As a business graduate,I surprised everyone with my decision to learn baking professionally, she recalls.
Pahwa will host her first workshop for Chandigarh on July 28 and 29 at Kids Own in Sector 17. My classes are a blend of what our grandmothers and mothers baked,fused with new flavours,international technique and styling in baking, she explains.
The workshop is for adults as well as children. The Cupcake Diva classes will be about mini cake versions of bigger cakes like black forest while the Tom n Jerry class is where one can learn to bake cheesecakes and mousse cakes. The Perfect Tea class is all about making tea cakes,shortbreads,tarts and brownies. Pahwas favourite,however,is the Chocoholics Day Out.
I love chocolate and theres nothing chocolate cant fix, says the 30-year-old chef. We agree.
