Tian-Asian Cusine Studio, at the ITC Maurya in New Delhi, is a creative Asian restaurant, which brags about giving its diners a holistic experience and not just a signature dish or two. At the helm of this very exciting kitchen is Chef Vikramjit Roy, who is redefining Asian food in India. The Top Chef 2015 award-winner for excellence in Asian cuisine, Chef Vikramjit is said to be big on presentation and drama.

This sits well with Tian, which means heavenly, and that’s what exactly the food at this rooftop restaurant does — take you closer to heaven. In today’s edition, it’s with a dish from the Land of the Rising Sun — the Shimeji Salad. Shimeji is a mushroom group that is rich in umami.

The uniqueness of the salad is the contrast of flavours with the miso vinaigrette and the spicy chocolate sand (yes, it sounds complicates, but it can be done at home).
