A workshop held on Tuesday at Momo’s Cafe,at Courtyard by Marriott City Centre,made a delicious attempt at re-defining the role of chocolate – from dessert staple to entrées and main course material. The message of the workshop was simple,that chocolate is a thing which can be used for different occasions,in different dishes. Various recipes to include chocolate in cooking were demonstrated by pastry chef,Guru Nathan. Justin Fernandes,assistant restaurant manager,also explained the audience how to prepare a White Chocolate Mocktail as well as a Dark Chocolate Mocktail (Temptation). Next on the list were Chocolate Chilli Corn Carne,Chocolate Salami and Chocolate Garnish. The best part of the effort was that the audience members got a chance to prepare the dishes themselves.
Unsweetened cocoa – 100gm
Dark chocolate – 600gm
Unsweetened strong coffee – 30ml
Butter – 400gm
Cookies – 600gm
Almond flakes – 100gm
Pistachio blanched – 125gm
*Melt the butter and chocolate together
*Slowly add the unsweetened cocoa,coffee,almond flakes,pistachio until well incorporated
*Break the biscuits into little pieces
*Stir the biscuits into the cream mixture using a wooden spoon until perfectly mixed
*Place the mixture over a piece of tinfoil and give it the shape of salami
*Wrap it on sides and refrigerate until hard.
