Like security forces,restaurants across the Capital are gearing up for Independence Day (provided you manage to make it past the security check posts,of course). The thali speciality restaurant,Khandani Rajdhani,in its 35 locations in the city,is having a special spread,with dishes including tricoloured rice and dhoklas. Vaango,the south Indian quick service restaurant will also be exploring shades of saffron,green and white in uttapams and idlis. While the orange comes from the chain’s signature gunpowder,the green will be induced from mint and spinach. Mocha,meanwhile,is going glocal (globally local) by infusing its menu with Indian flavours. On offer are Chipotle spiked tandoori chicken,Pasta up North (pasta cooked in makhani sauce) and Pasta Down South (pasta in a spicy peppercorn sauce).

Five-star hotels are also unfurling their flags with Independence Day meals. At the Imperial,1911’s meal of the day is Masala Potato and Lamb Seekh Tikki with Spinach and Chicken Lababdar,again a reimagining of the colours of the Indian flag on a plate,while Daniell’s Tavern is serving a special Indian thali with dishes from all corners of the country. The Pullman hotel in Gurgaon will be serving a trio of mousse,comprising white chocolate,green apple and blood orange. So go ahead,take a bite of freedom.
